The one and only Gumshara Ramen with its thick broth really hits the spot!
My friends call this dirty or muddy ramen but this is no BS ramen with all the thick goodness albeit without the savoury taste of MSG.
I always have just the good old tonkotsu with egg. I don't see the point of adulterating the ramen to be quite honest. Just the right amount of soup, pork, noodles and condiments.
Keep it simple and you know what.
Nothing comes close to this in terms of uniqueness so Sydney is pretty lucky.
They only take cash so please don't be silly and hold up the entire queue. We are all hungry. -

I don't think I should give it a 1 but I had it today(out of my budget) and felt ripped off that I could have got something so much better with $13.5 AUD. I got the thick soup because they would run out of it after 3 PM? so I thought #2 would be the option to go to since #1 is with more chashu for more money and #3 is more expensive cause it's spareribs. I just didn't like it at all...from the noodles to the thick broth, it just wasn't good and it honestly felt like a rip off for how much they give too. I will say that I LOVE the free condiments on the side which consist of their garlic sauce, their fried spice with garlic, sesame seeds, and spicy oil. With that said, the soup didn't do it for me as the thick soup made it sticky on my lips...kinda like eating candy/caramel and it kinda leaves a bad feeling if you get it on your lips?
I might have to try it again without the thick soup but I really don't want to spend my money here again just to see if it's better...cause it might not be. I like the food court style and it's odd this is where it was...but everything else about it was not good to me...I still want to give it a 1 but maybe #2 wasn't the right option so it's kinda harsh. -

Yelp to the rescue again. I was in Sydney, trying to feed my ramen obsession and yelp pointed me to this place. Did I say how much I love this place? Located in an underground food court near Darling Harbor but so amazing. I walked in and initially thought I was in the wrong place since I never expected such a highly rated restaurant to be located in this random foodcourt.
The long line at this stall seemed uncharacteristic of the location, but this just goes to show that the locals know how good this ramen is. All the signs at this stall advertise a traditional Japanese ramen with no msg and I can attest to just how fresh the broth was. You can see the broth going in the small kitchen behind the open window where you place your order. I had the garlic tonkotsu and omg it was divine. Thick, creamy, flavorful and so delicious. The broth is advertised as being thick but I found mine too thick so walked back up to the counter where I saw the Japanese sumo warrior looking chef get some fresh broth off the large rolling boiling pot of broth strain it into a bowl and pour this thinner broth into my thick bowl of broth. The thickness and consistency of the broth was perfect after that. The basic ramen starts at $16 but mine cost $25 with all the extras I just had to have. I got mine with extra bbq pork and eggs and I also ordered some dumplings as an appetizer.
When ordering you have the choice of fat or thin noodles and can request extra fat back if that's your preference. If you're bored with just traditional bbq pork as your meat you can add in some pork spareribs or just get the pork spareribs instead of the bbq pork. Extras like pork back fat skewers and dumplings, chili bombs, pickled cabbage and rice can all be ordered as sides or snacks.
This is the most popular eating establishment in the food court and it's easy to see why. Ramen flavors available include miso, and tonkotsu in mild and spicy. If in Sydney and craving the best ramen ever, be sure to stop by and give this place a try. -

Good authentic ramen with lots of bone flavour in the broth. You can see the effort they put into it by looking through into the kitchen, real ingredients boiling away for ages.
The thick soup was a bit too thick for me and quite salty. They do have a sign that says they can adjust the soup thickness, but you can't really tell until after you have ordered it. I also found the fatty port skewer a bit too salty.
Will have to come back and try the regular soup ramen for sure. -

More like a 4.5 stars- warning this noodle is not for the faint hearted but very delicious and high in cholesterol. They make their own broth using lots of pork bones and no MSG. They have plenty of options to choose from in terms of noodle options, what took this home was the raw black garlic oil that they have to add. It was so delicious that I still think about the distinct garlic smell
